This Junmai sake, brewed with a polishing ratio of 65%, is made with 100% locally sourced Yamada Nishiki rice from Fukuoka Prefecture, showcasing a strong local pride. Its flavor profile is best enjoyed chilled or at a slightly warm temperature, with a mild acidity complemented by sweet aromas and a rich rice umami, resulting in a refreshing finish. Although it is labeled as dry, the inherent sweetness in the aroma prevents it from being overly dry, achieving a balance that allows for the enjoyment of the rice's flavor.

The ultimate masterpiece of the brewer Keiichiro Katsuki, who is respected by many sake brewers. It has a gorgeous ginjo aroma, with tropical fruit scents spreading, and a soft mouthfeel with a clean finish, making it a well-balanced daiginjo sake. Fruity with a slightly edgy aroma. Sharp texture and smart acidity. A clear taste with a hint of bitterness in the aftertaste.
