Ibushi Cafe is a restaurant that offers Japanese cuisine and sweets in a cafe style, based on the concept of 'Invisible Craftsman's Touch'. Our chef, who has trained at a long-established ryotei in Kyoto, is dedicated to providing customers with safe, secure, and delicious dishes. One example of this is 'Aroma'. Aroma is an essential element that cannot be overlooked in creating 'Flavor' and 'Richness'. We enhance the deep richness of our dishes by using smoked seasonings during cooking.
Large grains that are fluffy when cooked, with a moderate sweetness and a refreshing texture, delicious even when cooled. Made with 'Aichi no Kaori', a representative rice of Aichi Prefecture.
We use soy sauce from a long-established soy sauce manufacturer, made with the Kanto two-stage brewing method. It is a completely additive-free seasoning with no added fragrances, colorings, or preservatives.
We use pink rock salt that has been ground into a powder. We utilize the ones that have been carefully smoked in-house.
We use extra virgin olive oil from Spain. Smoking adds rich flavor to the dishes.
We use tea leaves produced by contracted farmers in Mizunami City, Gifu Prefecture, using traditional cultivation methods. The tea is cultivated in the unique temperature differences of the mountainous region, resulting in a rich and flavorful tea.
We use high-quality black-haired cattle raised with care in Aichi, a land blessed with a warm climate and abundant water.
