Veggie Paella Course 5,500 yen (tax included) - Vegetable paella with the flavor of kombu (kelp) and gobo (burdock root) slowly soaked into the rice and baked to a savory aroma. Veggie bouillon with deep flavor carefully extracted from kelp and burdock root is used to slowly infuse the rice with seasonal vegetables and baked to a savory perfection. This dish is a satisfying Spanish bar-style dish without the use of animal products. This course does not use any animal products and maximizes the flavor of vegetables. We can also adjust the menu to meet vegan and allergy requirements. Please feel free to let us know if you have any requests.

At our restaurant, we use a special fermentation method to fully enjoy the aroma and sweetness of wheat. While it usually takes about 3 hours for regular bread to be completed, our bread-making process requires 12 hours for the primary fermentation. By allowing the fermentation to proceed slowly and carefully, we have been able to capture the true deliciousness of wheat. [Secondary Fermentation] After the primary fermentation is complete, the dough is shaped into a round form for secondary fermentation. ↓ [Shaping] Once the secondary fermentation is complete, the bread is shaped and placed in the oven to bake. ↓ [Completion] The bread is now complete. It can be enjoyed with sandwiches, pan con tomate, or ajillo. The word 'pan' that we Japanese commonly use comes from Portuguese. Therefore, in Spain, which is also a Latin language area, it is pronounced 'pan' as well.
