Ein verstecktes Juwel in Seoul, das genau wie eine "Symphonie der Gastronomie" ist.
Ich besuchte das mit einem Michelin-Stern ausgezeichnete französische Restaurant „Kang Minchul“ im Stadtteil Gangnam. Chefkoch Kang Minchul hat mit 24 Jahren nach Frankreich gewechselt und hat über 10 Jahre Erfahrung in den USA, Hongkong und Frankreich gesammelt, wo er in den renommierten Restaurants von Joël Robuchon, Alain Ducasse und Pierre Gagnaire seine Fähigkeiten verfeinert hat. Sein Können war in jedem Detail des gesamten Menüs spürbar.
Das Konzept dieses Restaurants ist "Symphonische Küche". Das Menü ist in „1. Satz“, „2. Satz“, „Finale“ und „Zugabe“ unterteilt, und es war eine Erfahrung, bei der sich die Melodien mit jedem Gericht aufbauten.
Der private Raum, in dem wir speisten, hatte eine sehr schöne Inneneinrichtung und eine ruhige, besondere Atmosphäre. Jedes Gericht war von hoher Qualität, besonders beeindruckt haben mich die folgenden Punkte.
Der 1. Satz begann mit einem Amuse-Bouche, gefolgt von Kaviar, Pfirsichgarnele (Bisque mit Kräuteröl), Jakobsmuschel (Rote Beete) und Hummer (Mango-Vinaigrette) – eine leichte und festliche Einleitung. Besonders interessant war „Caviar Redefined“. Hier konnte man drei Sorten Kaviar – Kristall, Baerii und Osietre Gros Grain – nach Größe, Farbe und Geschmack vergleichen, und ich war erstaunt, wie unterschiedlich selbst derselbe Kaviar sein kann. Dies war ein Gericht, das die Haltung des Restaurants, „Tradition aus einer modernen Perspektive neu zu interpretieren“, gut widerspiegelt.
Der 2. Satz bestand aus Fisch (Pilzbrühe mit Trüffel), Entenbrust und koreanischem Rinderfilet (Zitrus-Sabayon mit Tomate) und entwickelte sich zu einem schwereren und tiefgründigeren Erlebnis. Nach dem Finale mit Vanillebohne folgten als Zugabe Canelé, Kaffee-Schuh und Mandarinen-Gelee sowie Tee und Kaffee, sodass es bis zum Ende an nichts fehlte.
Der Service war professionell und hinterließ das Gefühl, gerade eine Aufführung beendet zu haben. Es ist schwierig, einen Tisch zu reservieren, aber es ist die Mühe wert. Ich kann dieses Restaurant von Herzen für Jubiläen oder besondere Anlässe in Seoul empfehlen.

Adding burrata cheese to the tomato dishes is highly recommended. The staff is polite, friendly, and can speak English. From the bar area, you can observe the preparation process of the dishes and enjoy a fantastic view. It's also conveniently located near the nearest subway station, making it worth a visit.
La Amitié is one of the oldest French restaurants in Korea and has consistently earned one Michelin star. The seafood dishes are unique and delicious, and the wine is highly recommended. The abalone dishes are tender and feature unique flavor combinations, and the scallop ceviche and seasonal fish with bisque sauce are exquisite. The amuse-bouche and desserts are also outstanding, making for an overall enjoyable dining experience.
Modern French restaurant with artistic and friendly atmosphere
Located atop a hill and on the 3rd floor of a building, Epanui offers a chic atmosphere with a limited number of tables and plenty of framed art pieces on display. The cuisine is overall delicious and it's a restaurant to visit for a special occasion, where you can enjoy beautifully presented dishes.

However, be cautious as the main dishes can cool quickly if seated by the window.

Trente, a new restaurant opened by sous chef Jeong Tejun in Samseong-dong, offers a la carte French cuisine and wine. From the welcome dish to scallop dishes, you can enjoy dishes made with fresh ingredients. The chicken and beef dishes are particularly recommended, with interesting flavor combinations, and the wine is delicious. The interior features a 4-person table overlooking the counter and open kitchen, and the staff exudes a relaxed and confident atmosphere.
