Founded in 1963 as a wholesale meat shop, we continue to operate sincerely as a specialty store for offal hot pot and Hakata cuisine. We aim to be a restaurant that provides even more satisfaction, offering a diverse menu including yakitori, gyoza, fried foods, and snacks that pair well with drinks. Of course, you can enjoy Hakata cuisine centered around offal hot pot as before, and it can also be used as an izakaya where you can casually enjoy your favorite snacks and drinks. We remove impurities that cause off-flavors and bitterness. Offal (internal organs) can have many impurities such as feed, intestinal fluid, and blood drips. Simply washing is not enough to remove these impurities. It is necessary to thoroughly remove the impurities to avoid ruining the flavor of the soup and dishes.
Even fresh beef and pork shabu, when used as is, will produce a lot of scum. Washing alone cannot remove the scum. Careful removal of the odor that interferes with the flavor of the dish is necessary.
To clean the offal, we specially prepare a broth using carefully selected ingredients such as kelp, bonito flakes, and mackerel flakes. This broth is made with great care and effort specifically for blanching. Blanching is a cooking method that involves briefly boiling or pouring hot water over the ingredients.
