This sake is a blend of the sake pressed using centrifugal separation technology without applying pressure and the sake pressed using the traditional method that involves applying pressure. By combining the qualities of the centrifugal separation, which results in a 'pure sake with no unpleasant aspects,' with the punchy flavor derived from the traditional pressing method, it expresses a refined elegance and delicacy with depth and complexity.
The sweetness of Yamada Nishiki rice unique to nigori sake. A refreshing effervescence created by secondary fermentation in the bottle. Finally, a vivid finish showcased by the delicate yet robust Junmai Daiginjo.
A shochu distilled from the sake lees left over after making Dassai, which is re-fermented. It has a fruity aroma characteristic of Junmai Daiginjo, and the taste is light.
