It is a basic course with a focus on wild vegetables. you can enjoy mitakien's standard dishes with simple seasoning, such as three kinds of wild vegetables, handmade tofu, and hand-squeezed okara.
This course allows you to enjoy the bounty of the mountain village. Freshly grilled fish dipped in Mitakien's special sansho miso (Japanese pepper paste), rainbow trout (Oncorhynchus mykiss), konnyaku (konnyaku dengaku) made every morning, and other delicacies from the mountain villages are on offer.
It is a course with a sense of feast, where you can fully enjoy the seasons of mitakien. enjoy the colors of the mountain village with your eyes, such as gibier (wild game), hot pot of pickled grass in spring, ice tofu in summer, and snow hot pot with mushrooms in autumn.
