★ Partnering with local fishermen, we continue to fish in Sagami Bay and deliver fresh local fish. ★ Fish caught in the northern seas of Hokkaido are airlifted to us. ★ The rock salt found in various regions is 100% natural rock salt. This deep-flavored salt, containing 7 to 13 types of minerals, pairs well with white fish. ★ The allure of the ingredients is enhanced by 'hon wasabi', which also serves as a perfect accompaniment to sake. Fresh and aromatic hon wasabi, grown in clean water, brings out the charm of the ingredients. ★ Our homemade soy sauce is rich in aroma and does not lose to the deliciousness of sushi.

This sake is named 'Shizuku' after the drop that naturally drips from the sake bag, offering a beautifully clear and exquisite flavor.
It enters smoothly and lightly with a beautiful dry junmai. It maintains its deliciousness at all temperature ranges: chilled, room temperature, and warmed.
It was named 'Kan Zashi' with the wish to warm the left side of the sushi, which is purple.
