The commitment of the original specialty store for Mapo Tofu - A specialty store where you can freely compare and taste five unique types of Mapo Tofu. Our soup is made by slowly extracting the umami from chicken and pork bones over time. We layer the flavor of kombu and umami, enhancing it with plenty of aromatic vegetables. The Mapo sauce is a perfect balance created by uniquely combining several types of doubanjiang, douban chili oil, fermented black beans, Sichuan pepper, and green Sichuan pepper, along with various spices. We use silky smooth tofu with deep sweetness, carefully prepared to enhance its deliciousness to a wobbly hot tofu state in a separate pot. The meat and vegetables are stir-fried slowly to maximize their umami. The finishing touch is seared with aromatic oil, leading to the creation of the ultimate Mapo Tofu by our skilled chefs. Classic spicy Sichuan 'Tokyo Mapo Tofu', the media-famous super spicy Mapo Tofu 'Enma', a white Mapo Tofu with no spice and salt flavor, a red sour and spicy Mapo Tofu, and a yellow cheese curry Mapo Tofu mixed with melting cheese and spices, among others, are also available.
