Using 'Kirishima Chicken' which is sourced within 24 hours of being freshly caught, this dish boasts exceptional freshness. It features a rich, juicy flavor and a soft, elastic texture. Known as a specialty dish from Southern Kyushu, this item is grilled all at once over a robust charcoal fire, with a simple seasoning of just salt. It is rich in iron, and when the iron in the meat comes into contact with air after being cut, it turns a vibrant red color, blending with the white marbled parts to appear sakura-colored, which is why it is also called sakura meat.
