The fresh horse sashimi assortment of two types, directly delivered from Senko Farm in Kumamoto Prefecture, includes lean meat and koune (futae-go). The fresh horse sashimi from Kumamoto is one of the most popular dishes, ranking among the top three. It is rich in iron, and when the iron in the meat comes into contact with air after being cut, it turns a vibrant red color, blending with the white marbled parts to appear sakura-colored, which is why it is also called sakura meat.
