Kagoshima Chiran Town 'Minamisatsuma Shokutori' and 'Satsuma Chiran Chicken' are raised over a period of 450 days. They possess a high amount of amino acids, which are key to their deliciousness, and through moderate exercise, they develop a good fat content. Compared to chickens raised for a shorter period, they create a significantly better quality and texture of meat.

The breed is a layer chicken, which is a parent bird for breeding or egg-laying. The overwhelming majority of chicken meat comes from young chickens (broilers) that are shipped at about 50 days old, and even the high-end branded chickens commonly seen today are shipped at around 80 to 120 days old. However, 'Satsuma Chiran Chicken' is raised for 450 days, which is 4 to 10 times longer than those. The secret to the deliciousness of 'Satsuma Chiran Chicken' lies in this rich rearing environment and the long rearing period of 450 days. The extended rearing time allows for a high content of healthy collagen, linoleic acid, and amino acids that contribute to flavor. Additionally, with moderate exercise, the fat content is well-developed, resulting in significantly superior meat quality and texture compared to chickens raised for shorter periods.

Using mackerel from the Goto Islands in Nagasaki, specifically from 'Onimaru Suisan'. Each mackerel weighs over 400g and has been battered by the rough waves of the Tsushima Sea, resulting in a rich fat content. Customers can choose to have it grilled, served as is, or in halves.
