Three kinds of local sake will be compared! Shichiken "Kaikoma" Junmai Daiginjo from Yamanashi Meijo, Seikou "Omachi" Junmai Daiginjo from Take-no-i Shuzo, and Yoro "Oar" Honjozo from Yoro Shuzo.

The innovative toji (master brewer) Koichiro Shimizu has utilized the knowledge he gained at Tokyo University of Agriculture to develop 'Tsurubara Yeast'. At our store, we offer two types made with different sake rice using the same yeast: 'Omachi' and 'Gohyakumangoku'. Please compare the differences in flavor.

The sake made entirely by the 'fune shibori' method is free of off-flavors, allowing you to enjoy the true taste of sake. Due to its limited production, this product is rarely available, but we have obtained it through a unique route at Danrokukan and have received permission to sell it. Since then, we have consistently engaged in rice cultivation and sake brewing. The sake rice, nurtured by the rich nature of Hakushu overlooking the Southern Alps and one of Japan's finest waters, 'Kamikoma's Snowmelt,' is transformed into the sake 'Shichiken' through the skill of the brewers.

Established in the second year of the Kansei era, it opened its brewery in the current Aoyanagi Town, Fujikawa City, and has been widely loved under the sake name 'Ichiryoku'. In Showa 8, the poet Akiko Yosano, who stayed at Manyo Sake Brewery, composed the poem 'Like going to Horyu-ji, the sake of Kai, Kamosaruru Brewery', which led to the renaming of the current sake name. It is a sake with a delicate aroma.
