Built in 1871, the current La Dolce Vita restaurant in Lemont was once home to The Charles Fruhauf Store. Charles Fruhauf, a German-born immigrant, built his storefront out of Lemont limestone (Athens Marble) and his general store was a Lemont staple throughout the late 1800's. We brewed this Marzen as homage to him and the beautiful building that still stands to this day. Created by the Moortgat family, bottled Duvel is one of Belgium's favorite ales. The secret of its success lies in using only best-quality ingredients, and in the well-balanced, very specific, complex brewing and refermentation process that takes over 90 days. After brewing and first fermentation – which takes about 30 days – the beer is tasted by the brewmaster and his staff. At this stage this beer is called "single-fermented." On brewday, added Raw Texas wildflower honey from Good Flow Honey Co. in Austin, Texas late in the boil. After the first several weeks of fermentation, we added more honey to the beer. Finally, the beer was 100% naturally refermented in bottles, kegs, and casks using more of the raw, Texas wildflower honey. In addition to the honey, Bière de Miel was brewed with Hill Country well water, malted barley, malted wheat, and hops

Ordinary bitter is gold to copper colored with medium bitterness, light to medium body, and low to medium residual malt sweetness. Hop flavor and aroma character may be evident at the brewer's discretion. Mild carbonation traditionally characterizes draft-cask versions, but in bottled versions, a slight increase in carbon dioxide content is acceptable. Fruity-ester character and very low diacetyl (butterscotch) character are acceptable in aroma and flavor, but should be minimized in this form of bitter. Chill haze is allowable at cold temperatures. Today, from their newer, much larger facility, Right Bee has hired their first employee, started bottling and is now supplying their singular, eponymous cider to more than 50 different bars and restaurants in the Windy City. A truly handmade operation — from the tap handles to the PowerPoint-created logo — Right Bee sources its juice from family-run juicers on the East Coast, fermenting to dryness then back-sweetening with a mixture of organic sugar and Chicago honey. The couple even has aspirations to soon harvest honey from their own beehives atop the production facility once they get the green light from the city. "The Huon region directly south of Hobart is where Tasmania earned the reputation as the 'Apple Isle'. But apples in a beer? Wanting acidity to 'freshen' the beer and increase its drinkability and capacity to cellar, we thought apples would be best applied to the strong flavors of dark ales. The result is well worth discovery. It is our 'red wine' of ale and we recommend it be served in a wine glass, at room temperature with the meat dishes and cheeses normally accompanying such wines. Our Huon Dark Apple Ale starts as a rich and robust dark ale fermented with brewer's yeast. We then add up to 25% whole apple juice from Tasmania's pristine Huon Valley (or "Apple-HQ" as we like to call it!) and re-ferment with a selected champagne yeast. Extended tank maturation pre-bottling, a third fermentation in bottle and, preferably, months of bottle-age completes a very individual ale of extremely complex character. This ale truly is a 'uniquely Tasmanian experience' and can be enjoyed now or will reward cellaring by developing more complexity with age"

Built in 1871, the current La Dolce Vita restaurant in Lemont was once home to The Charles Fruhauf Store. Charles Fruhauf, a German-born immigrant, built his storefront out of Lemont limestone (Athens Marble) and his general store was a Lemont staple throughout the late 1800's. We brewed this Marzen as homage to him and the beautiful building that still stands to this day. Created by the Moortgat family, bottled Duvel is one of Belgium's favorite ales. On brewday, added Raw Texas wildflower honey from Good Flow Honey Co. in Austin, Texas late in the boil. After the first several weeks of fermentation, we added more honey to the beer. Finally, the beer was 100% naturally refermented in bottles, kegs, and casks using more of the raw, Texas wildflower honey. In addition to the honey, Bière de Miel was brewed with Hill Country well water, malted barley, malted wheat, and hops

Ordinary bitter is gold to copper colored with medium bitterness, light to medium body, and low to medium residual malt sweetness. Hop flavor and aroma character may be evident at the brewer's discretion. Mild carbonation traditionally characterizes draft-cask versions, but in bottled versions, a slight increase in carbon dioxide content is acceptable. In the early 1990s Dead Guy Ale was created as a private tap sticker to celebrate the Mayan Day of the Dead (November 1st, All Souls Day) for Casa U Betcha in Portland, Oregon. Tenured brewer Charlie Davis and cider enthusiast Katie Morgan launched their urban cidery in late 2014, providing the cider-happy city with its own apple tipple. Today, from their newer, much larger facility, Right Bee has hired their first employee, started bottling and is now supplying their singular, eponymous cider to more than 50 different bars and restaurants in the Windy City. A truly handmade operation — from the tap handles to the PowerPoint-created logo — Right Bee sources its juice from family-run juicers on the East Coast, fermenting to dryness then back-sweetening with a mixture of organic sugar and Chicago honey. The couple even has aspirations to soon harvest honey from their own beehives atop the production facility once they get the green light from the city. "The Huon region directly south of Hobart is where Tasmania earned the reputation as the 'Apple Isle'. But apples in a beer? Wanting acidity to 'freshen' the beer and increase its drinkability and capacity to cellar, we thought apples would be best applied to the strong flavors of dark ales. The result is well worth discovery. It is our 'red wine' of ale and we recommend it be served in a wine glass, at room temperature with the meat dishes and cheeses normally accompanying such wines. Our Huon Dark Apple Ale starts as a rich and robust dark ale fermented with brewer's yeast. We then add up to 25% whole apple juice from Tasmania's pristine Huon Valley (or "Apple-HQ" as we like to call it!) and re-ferment with a selected champagne yeast. Extended tank maturation pre-bottling, a third fermentation in bottle and, preferably, months of bottle-age completes a very individual ale of extremely complex character. Built in 1871, the current La Dolce Vita restaurant in Lemont was once home to The Charles Fruhauf Store. On brewday, added Raw Texas wildflower honey from Good Flow Honey Co. in Austin, Texas late in the boil. After the first several weeks of fermentation, we added more honey to the beer. Ordinary bitter is gold to copper colored with medium bitterness, light to medium body, and low to medium residual malt sweetness. Tenured brewer Charlie Davis and cider enthusiast Katie Morgan launched their urban cidery in late 2014, providing the cider-happy city with its own apple tipple. Today, from their newer, much larger facility, Right Bee has hired their first employee, started bottling and is now supplying their singular, eponymous cider to more than 50 different bars and restaurants in the Windy City. A truly handmade operation — from the tap handles to the PowerPoint-created logo — Right Bee sources its juice from family-run juicers on the East Coast, fermenting to dryness then back-sweetening with a mixture of organic sugar and Chicago honey. The couple even has aspirations to soon harvest honey from their own beehives atop the production facility once they get the green light from the city. The semi-dry cider is left cloudy and unfiltered, a trademark from Davis' years in brewing, homing in on pure apple aromas and flavors. "The Huon region directly south of Hobart is where Tasmania earned the reputation as the 'Apple Isle'. But apples in a beer? Wanting acidity to 'freshen' the beer and increase its drinkability and capacity to cellar, we thought apples would be best applied to the strong flavors of dark ales. The result is well worth discovery. It is our 'red wine' of ale and we recommend it be served in a wine glass, at room temperature with the meat dishes and cheeses normally accompanying such wines. Our Huon Dark Apple Ale starts as a rich and robust dark ale fermented with brewer's yeast. We then add up to 25% whole apple juice from Tasmania's pristine Huon Valley (or "Apple-HQ" as we like to call it!) and re-ferment with a selected champagne yeast. Extended tank maturation pre-bottling, a third fermentation in bottle and, preferably, months of bottle-age completes a very individual ale of extremely complex character. This ale truly is a 'uniquely Tasmanian experience' and can be enjoyed now or will reward cellaring by developing more complexity with age"
