In Shiga Prefecture, only at the Shiga Meat Market in Omihachiman City, auctions for Omi beef are held. Ka-den obtained the 'buying rights' to participate in the auction for whole Omi beef carcasses in January 2015 as a participant in the Shiga Meat Center regional wholesale market. Furthermore, in February, we obtained a business license for meat sales and opened a wholesale store for Omi beef.
A-5 refers to the beef grading system established by the Japan Meat Grading Association, where ABC indicates the yield grade, which measures the amount of meat obtained from a single cow. The quality grades range from 1 to 5, indicating the marbling level. Currently, A-5 is the highest grade, but it is evaluated based solely on appearance, and the actual 'deliciousness' is not taken into account; it serves merely as a guideline for transactions.
Dainaka, which spans the cities of Omihachiman and Higashiomi, is a large agricultural area famous as the home of Omi beef in the agricultural kingdom of Omi. About 60-70% of the Omi beef, known as the pinnacle of Shiga Prefecture, is raised on farms in this region. At Hanadono ka-den, we procure certified Omi beef of the highest grade A-5 to B-4 through 'relative transactions' with Sawabokujou.
