Many people tend to think that using sugar or chemical seasonings makes food taste better, but it can lead to thirst after meals and excessive salt intake. By utilizing base dashi, olive oil, and aromatic vegetables, we aim to bring out the flavors of the ingredients and provide meals that are gentle on the body and easy to absorb nutrients. There may be times when it takes longer to serve, but we take great care in preparing each dish. Please enjoy our veggie mama, filled with seasonal vegetables.
We have contract farmers in Aichi Prefecture growing highly nutritious leafy vegetables. These include baby leaves of kale and amaranth, which contain 8 to 10 times more nutrients than regular salads. The rich flavor and freshness contribute to the deliciousness of the salad. The dressing is made with burdock from Aomori. Takeout is also available.

The fields of contracted farmer 'Yukio Kimura' in Takabatake Town are located on a steep slope where you would want a 'Funicular' (a mountain train) to sit like an 'Akai Oni' (red demon). In this field, the drainage is good, and the terroir provides an ideal load for grape growth, resulting in grapes with concentrated flavors.
