Authentic Edomae sushi that is not very familiar in Fukuyama. The kohada, rich in fat and sourced from Toyosu, is prepared with the restaurant's special salt and vinegar balance. The rice is Akita Komachi from Iwate, and red vinegar is used in the seasoning.
Throughout the year, we use tuna from Oma sourced from Toyosu. This is a dish that allows you to fully enjoy the rich flavor of the fat. It has no greasiness and has a texture that melts away in your mouth.
Anago sourced from Nagasaki, simmered in our homemade sweet and spicy special sauce. The sauce filled with the umami of the anago spreads in your mouth, creating a melt-in-your-mouth fluffy texture that brings a smile to your face.
