The "weaning ceremony" has been held since the Heian period (794-1185) to pray for the healthy growth and happiness of the child. When a newborn baby's baby teeth begin to erupt around 100 days after birth, the child imitates eating with a wish that "he/she will have no trouble with food for the rest of his/her life. Finally, a stone is used to harden the baby's teeth, with the hope that the baby's teeth will be as strong as the stone. A special menu is prepared for the 100th day celebration (weaning ceremony). The ingredient 'Rikuha No. 132' is a rice that was born in Akita Prefecture during the Taisho era, and it is a rice that has as its parents two of the 'Three Great Japanese Varieties' from the Meiji era: 'Kame no O' and 'Aikoku'. Therefore, it also has the nickname 'Aikame'. It is a very hard rice, and its flavor approaches completion with long-term refrigerated storage. It is made entirely in wooden barrels, making it the most standard line that allows you to enjoy the taste of 'Shinsei' stably and thoroughly. It brings out the potential of yeast No. 6 even more, making it the ideal sake for aging as a vintage.

A popular brand that can be said to have created the 'phantom sake' boom, known by everyone. Its fruity taste and aroma have changed the concept of sake and led to a new wave of Japanese sake. Made with Yamada Nishiki polished to the extreme of 23% (77%), it challenges the highest level of Junmai Daiginjo. It features a gorgeous aroma and a clean honey-like sweetness when tasted, with a finish that is smooth yet lingers long after swallowing.

Known as the origin of nigori sake, this brewery creates sake that radiates individuality and a rich sense of the seasons. Using the pure 'Fushimizu' water from the Momoyama hills, it brews 'delicious water' that evokes the charm of Kyoto. Developed by the Kyoto Prefectural Industrial Technology Research Institute, the sake yeasts 'Kyo no Koi (No.51)' and 'Kyo no Hana No.87' are used. No.51 has a sweet aroma and a refreshing taste, while No.87 has a floral aroma and a rich flavor. Sake brewed with each yeast is blended into 'Karen'. Enjoy this new realm of Japanese sake.

Sasaki Sake Brewery, a traditional sake maker with a history of four generations in the heart of Kyoto. Using 'Kinmeisui' and 'Ginmeisui', which are said to have been used by Sen no Rikyū for tea ceremonies, as brewing water, they continue to brew using handmade techniques passed down in Kyoto, valuing the umami of rice and striving to ship it in its natural state. This is a junmai sake brewed with daiginjo techniques, fermented slowly at low temperatures for a long time. It has a fruity aroma and a rich flavor characteristic of junmai sake, with a crisp and dry mouthfeel.
A vivid personality bearing the name of Kyoto's unique figure 'Kitaoji Rosanjin'. This is a Kyoto-exclusive sake made using 'Iwai', a sake-brewing rice suitable for Kyoto, and 'Fushimizu', a famous water from Fushimi, Kyoto.
