Named for its golden shining eyes, it is a high-end fish that lives in the deep sea. Its body is covered in a vivid red color, which is why it is sometimes called the 'Deep Sea Red Gem.' It is rich in nutrients, high in protein and fat. It is also abundant in minerals, making it excellent for beauty and health. It is truly an outstanding fish.
The Kinmedai served at our restaurant mainly uses the brand caught Kinmedai from off the coast of Choshi, Chiba. The fat content and umami are rated as the highest quality at Tsukiji Market. They grow up blessed with abundant food, and regardless of size, they are delicious with high-quality fat throughout the year. Recognized as 'Choshi Tsuri Kinmedai,' it has also been certified as a brand seafood product of Chiba Prefecture, establishing its status.

We invite you to enjoy our pride, the local Kinmedai from Choshi.

The broth is flavored with kombu and special iriko, seasoned with tamari soy sauce. The fatty, fresh sashimi-quality high-end fish, Kinmedai, is quickly dipped in the broth for about 2 seconds... Please experience the rest in our restaurant! Serves 2.
