The soup of this ramen is a straightforward battle with only one type of 'tonkotsu shoyu'. It is made by simmering carefully selected domestically produced pork bones and aromatic vegetables every morning at each store. Contrary to its appearance, the soup has a rich yet light 'tonkotsu flavor'. Combined with homemade char siu, menma cooked at each store, and flavorful Kujo green onions, it is a masterpiece finished with exquisite balance.
