Local fish from Yakushima is low-temperature smoked to retain a moist texture similar to raw ham, while also having a distinct smokiness from proper smoking. This assortment includes four types of smoked products, but the contents may vary depending on the season.
We take the specialty mackerel caught in the waters near Yakushima and carefully make it into mackerel flakes. These flakes are shaved in the store and used by customers to make a broth for zosui. We use only Yakushima salt and soy sauce as seasonings, without any waste. Please enjoy the rich aroma of mackerel broth and the intense umami flavor different from bonito broth.
