The difference between the grilled eel from Kanto and Kansai is twofold: the 'cutting method' and the 'grilling method.' The samurai culture of Kanto uses 'back-cutting' and steams it for a fluffy texture, while the merchant culture of Kansai uses 'belly-cutting' and only grills it. The characteristic is a crispy and fragrant finish. The eel from Kyoto Nijo Charyo combines the best of both worlds. It undergoes a total of 8 processes: three times of white grilling, one steaming, one more white grilling, and three times of grilling. This is a carefully crafted dish that brings out the deliciousness of the eel through meticulous effort.
