The differences between grilled eel in Kanto and Kansai are twofold: 'cutting style' and 'cooking method.' The samurai culture of Kanto uses 'back cut' and steams it for a fluffy texture, while the merchant culture of Kansai uses 'belly cut' and 'grilling only.' The characteristic is a crispy and fragrant finish. The eel from Kyoto Nijo Tea Room combines the best of both worlds. It undergoes a total of 8 processes: three times white grilling, one steaming, one more white grilling, and three times grilling. This meticulous process brings out the deliciousness of the eel.
