We use sea urchins from Nagasaki, such as those from Toishi, Omura, and Sasebo. The locally sourced sea urchins are small in size but have a strong umami flavor and rich taste. You can enjoy the changing flavors depending on the season, with purple sea urchins in the usual season and red sea urchins in the summer.
Fresh eel caught off the coast of Goto and Tsushima is cooked tenderly and simmered to perfection. The eel from Nagasaki has just the right amount of fat and a refined flavor. The carefully prepared sushi is fluffy, melts in your mouth, and spreads deliciousness throughout.
Using shrimp caught in Nagasaki, such as Akashira shrimp and Kuruma shrimp, we prepare it by hand. By boiling it just enough to cook through, we maximize the umami and sweetness of the shrimp. You can enjoy its flavor along with a firm texture.
