A proud dish named after our shop. ◆Vegetables◆ We use 8 kg (equivalent to 50 fresh tomatoes) and 5 kg (equivalent to 30 onions) of fresh vegetables, simmered carefully for 15 hours. Additionally, we serve a generous portion of over 15 types of seasonal vegetables that are deep-fried. All the vegetables used are domestically sourced. ◆Three-Stage Flavor Change◆ First, the sweetness of the vegetables, followed by a subtle acidity from the tomatoes, and finally, a lingering spiciness that excites the palate. This new curry flavor is made solely from vegetables and spices. ◆Rice◆ We use Kyoto's Mamekko rice, selected specifically to pair with this curry. It is a natural rice grown using organic fertilizers made primarily from okara, making it gentle on both the environment and the body.
