Ise Masamune (Yokkaichi, Mie Prefecture) Junmai
This dish uses grilled fins from domestically sourced tiger pufferfish that we prepare in-house. After steaming for about 3 minutes, the aroma and umami of the sake will dissolve, turning it amber in color. You can also enjoy the gradual release of flavor and aroma if you start drinking without steaming. Please be careful not to burn yourself during this process. If you want a milder taste, you can ignite it when covering or opening the container to evaporate the alcohol. If you would like to do this yourself, please let us know.
The plum liqueur from Kanboubai Brewery in Tsu City, Mie Prefecture, is a genuine sake made using traditional Japanese sake brewing methods.

Winter sake 'Shinshu' is sake made from rice harvested in the autumn of that year and sold until around March of the following year. It is cherished as a lucky drink. Many 'Shinshu' sakes are shipped without pasteurization, in their freshly pressed state. 'Shiboritate' and 'Hatsushibori' are spring sakes sold from March to around May, limited to the spring season. Summer sake 'Natsusake' is a summer limited sake available from around June. Autumn sake 'Hiyadori' and 'Akiagari' are autumn limited sakes available from around September to November. 'Hiyadori' is shipped in a 'namadume' state without a second pasteurization. It is called 'Hiyadori' because it is shipped cold (or 'dropped') without pasteurization before bottling. Hiyadori, carefully aged in a cool brewery during summer, features a mellow and rich flavor. On the other hand, sake that is stored and aged deliciously until autumn, regardless of the number of pasteurizations, is called 'Akiagari'. Both can only be enjoyed in autumn.

A new standard product has appeared from the Kuroki Main Store in Miyazaki Prefecture. The significant difference is that the alcohol content is set at 35 degrees, which is considerably higher than regular shochu and previous Nakanaka. It leaves a strong aftertaste when swallowed, but the lightness unique to Nakanaka is still present.
