A synonym for motsu-yaki. It is what is known as horumon. We have prepared it uniquely to make it tender. The right amount of fat and the crispy skin when grilled are delicious. Recommended with tare sauce and sansho pepper. It has no unpleasant smell, so it also goes well with salt-grilled and beer.
A high-quality red meat with a firm texture. It has low fat content and goes well with both salt and sauce.
Fresh liver has no odor, and even those who are not fond of liver should definitely try delicious liver!
Recommended for salt-grilled. Has a resilient texture.
When it comes to salt-grilled dishes, it's all about the beef tongue! It has a nice chewy texture.
Salt-grilled is recommended. A rare cut that can be obtained from one skewer from one pig. There are only 2 to 3 available per day.
Both salt and sauce are recommended. A single piece that includes six parts such as 'airway,' 'esophagus,' 'hyoid bone,' and 'Adam's apple.'
This dish combines the lean 'sagari' with the moderately fatty 'harami' in a balanced manner. Both 'salt' and 'sauce' are recommended. The 'spice grill (salt and pepper, garlic, soy sauce)' offers a steak-like flavor.
When grilled with 'tare' and sprinkled with sansho pepper, it tastes like 'grilled eel liver'. The unique flavor is enhanced by 'salt'. It has a fluffy texture.
Recommended dish is 'Shoyu-yaki'. It is pork 'motsu'. It has a chewy texture like a shellfish and the taste is mild without any strong flavors.
Recommended with 'salt'. A rare part that can be skewered with two pieces from one pig. It has a slightly softer and crunchy texture than cartilage, and the sweetness of the fat around it goes well with beer.
This hormone is blanched without boiling, giving it a firmer texture than 'shiro'. It is marinated in miso and grilled to a fragrant finish.
Also known as 'Uwashi'. A rare part weighing around 150g from one pig. It has thickness and better fat content than 'Shiro', and when grilled with salt, the sweetness stands out.
