The balance of flavor and acidity due to lactic acid fermentation is wonderful and exceptional. It is a unique suguki that has never been tasted anywhere else. Senmaizuke" also has a strong umami taste and a fruity flavor. Shibazuke" has a refreshing sourness that sets it apart from pickles made with additives. Suguki, Senmaizuke, and Shibazuke do not contain any chemical seasonings, colorings, or preservatives. The charm of pickles lies in the umami, sourness, and flavor resulting from fermentation. Pickles with additives should be avoided.
