Laurent Perrier’s history and that of gastronomy have always been intimately linked. Since the 1950s, Laurent Perrier has developed a range of wines based on freshness, finesse and elegance to pair perfectly with French gastronomy, both as an aperitif and throughout the meal. Since then, Laurent Perrier has always been able to accompany the key players in gastronomy and to sublimate their creations.
Champagne Henriot, founded in 1808, is one of the rare Champagne houses that have remained under the same family ownership for over two hundred years. The wines improved massively under the watchful eye of cellar master Laurent Fresnet who won the International Wine Challenge “Sparkling Winemaker of the Year” award for two successive years, in 2015 and again in 2016. Laurent moved on at the beginning of 2020 and was succeeded by the talented Alice Tetienne who had previously worked with Krug.
These Sussex experts in viticulture allow their wines to mature in the cellars for many years, monitoring them constantly. They are patient and respectful; making great quality traditional method sparkling wine which takes time and requires fastidious attention to detail but the result is a fabulous sparkling wine that can be enjoyed on any occasion.

Aberfeldy 12 | Heather Honey Syrup | Bitters. An all-time classic with a local twist. Using the 12-year-old expression from our whisky partners Aberfeldy, we use a Perthshire heather honey to make a delicious syrup that accentuates the spice and fruit notes of the whisky. Garnished with a dehydrated honey crisp to top off a real taste of Perthshire
Vesperó Agave Spirit | Agave Syrup | Lime Juice | Orange Juice | Orange Liqueur | Lime & Sea Salt Air. Using Scotland’s first ever agave spirit, this is a modern version of a classic. Rich mezcal notes are complimented with orange and lime citrus, sweetened with a caress of agave syrup, and then topped with a lime and sea salt air
Botanist Gin | Italicus | Vermouth | Pine Oil. Our take on a classic dry martini. Made with Botanist gin, dry vermouth and a bergamot liqueur, we then smoke it with Douglas Fir from our grounds before garnishing with a pine tree oil, again made from pine needles from our grounds
Iona Gin | Nc’nean Whisky | Nettle Cordial. Land and sea in one glass. On the nose, earthy and floral. Once you bite into the cocktail onion, it opens up the salinity of the drink and gives a real taste of the ocean
Holy Grass Vodka | Orcadian Moon Coffee Liqueur | Cream. A Scottish take on a White Russian. Using vodka made in Caithness, coffee liqueur from Orkney and cream from Perthshire, it’s rich, smooth and indulgent
Blanco Tequila | Pink Grapefruit Juice | Lime Juice | Grapefruit Soda | Agave Syrup
