The shop quietly stands in a residential area, resembling a little hideaway. When I sat at the counter, I was served a beef stew as an appetizer, which paired perfectly with the baguette that was crisped over a shichirin (a small charcoal grill). The roasts and short ribs, grilled slowly on the small shichirin, absorbed the aroma of the charcoal, and their melt-in-your-mouth texture brought a smile to my face. The thick slices of beef tongue burst with flavor the more I chewed, and when dipped in the plum lemon sauce, it added a refreshing touch that made it even more enjoyable. The offal, such as heart and beef intestines, was also very fresh, providing a delightful, bouncy texture. The dish of vegetables and short ribs coated in garlic cheese was aromatic and kept me entertained until the very end.
