This is an omakase course of izakaya cuisine and drinks centering on wine and junmai (pure rice) sake. This is a course in the style of free refills of wine and junmai sake. Dry: Merlot / Cabernet Sauvignon. After being harvested by machine at night, the grapes undergo 24 hours of skin maceration to extract color and aroma. It has a bright pale rose color, rich fruit flavors reminiscent of red currant and cherry, and a very refreshing mouthfeel.
Medium body: Spätburgunder (Pinot Noir) is fermented and aged in stainless steel tanks. It has a sweeter fruitiness compared to Burgundy Pinot Noir, offering a soft and easy-to-drink style.
Full-bodied: Monastrell with attractive aromas of ripe fruit and flowers. On the palate, it is lively, fresh, and well-balanced. Along with the fruitiness, a moderate acidity and elegant tannins can be felt.
Full-bodied: Rich aromas reminiscent of Saperavi, blackberries, cassis, and plums, with a hint of vanilla from the barrel. It has plenty of ripe fruit flavors, and the long finish features firm tannins.
Full-bodied: Feteasca Neagra has rich tannins that pair well with barrels, allowing for the possibility of long-term aging. The vineyard is located in Valul lui Traian. Aging is done in stainless steel tanks, with a portion in oak barrels for 6 months. It has aromas of wild berries, cherries, and prunes, with subtle hints of sweet spices like cinnamon and vanilla.
Full-bodied: After fermentation in stainless steel tanks, aging is mainly done in stainless steel tanks, but to impart soft tannins and sweetness, a small portion is aged in French oak barrels.
Full-bodied: Cabernet Sauvignon with aromas of other dark fruits, subtle spices, and hints of dried leaves, offering a refined flavor. It has a round, well-balanced mouthfeel, silky tannins, and distinctive notes of caramel and licorice.
Full-bodied: Montepulciano has a deep red color that is almost opaque, with a strength that hints at a slight sweetness and the ability to age well. It also has a certain suppleness and smoothness. 'We specially age it for our Japanese customers to soften the tannins before shipping,' they mentioned.
Dry: Airen/Chardonnay/Macabeo. You can feel the rich fruitiness reminiscent of citrus fruits like lemon and grapefruit, along with the ripe flavors of tropical fruits. Enjoy the wonderfully fresh and pleasant mouthfeel.
Dry: Arinto has a bright pale yellow color, with aromas of peach, ripe apple, and a hint of tropical pear. The palate is very fresh, with a harmonious flavor.
Dry: Weissburgunder (Pinot Blanc) is fermented for about 6 weeks at 18 degrees with humidity control in stainless steel tanks. It has aromas of yellow peach and hints of lemon. The acidity is moderate.
Dry: Aromatic and fresh scent reminiscent of Moscato Giallo rose petals, with rich fruitiness akin to apricot. The finish has a subtle sweetness, harmonizing with a moderate acidity.
Dry: Sauvignon Blanc with very complex and strong floral aromas that gradually transform into ripe tropical fruits such as passion fruit, lime, and pineapple. It has a broad attack, with a subtle sweetness and distinct fruity aromas, supported by well-balanced acidity.
Dry: This wine is a blend of two distinctive grape varieties, Feteasca Regala and Riesling. It has aromas reminiscent of wildflowers. It is robust and has a noticeable mineral element.

[France/Champagne Region] Made from 100% dry Grand Cru Chardonnay, this Champagne is known as the house wine of Hall Bouquiez. It features nuances of grapefruit, green apple, white flowers, and herbal tea, complemented by a beautiful acidity and minerality that brings everything together. Over time, the nuances of fruitiness begin to change.
[France/Champagne Region] Chardonnay Dry. Mr. Robuchon was captivated, and there has been a flood of inquiries from Michelin-starred restaurants around the world. In just 30 years since its establishment, it has become a maison with high acclaim and influence, comparable to giants of the Champagne world such as Veuve Clicquot, Chandon, and Bollinger. [Spain] Xarel-lo / Macabeo / Parellada Dry Cava produced by a highly praised producer, threatening the status of Champagne. With a Parker score of 90, its yellow color exudes luxury, complemented by aromas of green apple and lemon, along with a hint of toastiness, delivering a dry sensation with noticeable acidity.
Australia: Full-bodied: The Shiraz has rich fruit flavors of dark plum and blackberry. Aromas of tar and graphite follow, with hints of dried herbs and tobacco, while supple tannins provide structure, and flavors of coffee powder and Himalayan cedar spread. The gorgeous taste of black fruits and the spicy notes of white pepper add color to the finish.
Italy: Full-bodied: This cuvée showcases the strength and elegance of the Nebbiolo grape, which is used in Barolo and Barbaresco, while also offering a softness that can be enjoyed at a young age. On the palate, the juicy fruit flavors are complemented by vibrant acidity. The finish reveals a spicy nuance. This is from the 2021 vintage, which is considered an outstanding year.
France Full-bodied: La Gibrilotte Burgundy Rouge is a red wine produced by the négociant division of Claude Dugat, the top producer in Gevrey-Chambertin. As the wines surpass the village name of Gevrey, they become more complex, while Burgundy Rouge is crafted with the belief that enjoying simple deliciousness is important, aiming for a fresh and softer taste.
