I received a bottle from the Hagi sake brewery, and from the moment I opened it, the vibrant aroma lifted my spirits. When poured into a glass, it sparkles with a pale golden color, exuding elegance. Upon tasting, it is refreshing, and the fragrance gently spreads. The umami of the rice and the fruity sweetness intertwine, with a pleasant acidity. The aftertaste is clean and well-balanced, conveying a sense of high quality. I feel that this is a special bottle among the Junmai Daiginjo of Toyo Bijin, and I am happy to savor it slowly.
