With the owner's dedication infused into each bowl, you can enjoy hand-pulled soba at its best. The soba served with flavorful 'ago dashi' and the special 'oni kurumi soba' are particularly recommended. In a calm space reminiscent of a traditional farmhouse, I felt at ease the moment I entered. I got a little lost as there were no signs, but I was able to find my way thanks to the entrance curtain. It's a restaurant that requires a reservation, and I was pleased that they served freshly made dishes at just the right time. The thin noodles have a pleasantly chewy texture, and the contrast between the gentle broth made with flying fish and the robust dipping sauce is enjoyable. The soba, which is carefully ground with a mortar and pestle using walnuts, has a rich aroma and a beautifully spread umami flavor. The dashimaki tamago (Japanese rolled omelet) and the risotto made with buckwheat are also meticulously prepared, showcasing the quality of the island's ingredients.
