The body is tender, the skin is fragrant, and each bite brings happiness. The sauce has a light texture, and it's nice that you can add more to suit your taste later. The rice is also nicely infused with flavor, making it easy to eat on its own. With hitsumabushi, you can first enjoy it as is, then add condiments, and finally savor it with broth. I also saw suggestions to combine it with raw egg, but eating it with rolled omelet is also a perfect match. The counter and tables are well arranged, and you can also enjoy the accompanying warabi mochi, making for a pleasant experience.
