Sitting at the counter, I was greeted by the fragrant hinoki wood, creating a calm atmosphere. The sushi prepared right in front of me had exceptional freshness, with the tuna and sweet shrimp being particularly impressive. With a wide variety of toppings to choose from, it was enjoyable to deliberate on which to select, but each option provided a satisfying experience. The grilled bonito tataki, with its crispy skin, was delicious and left a lasting flavor. The butter-grilled squid and grilled yellowtail collar were also thick and flavorful, with each bite releasing more umami. The chawanmushi was served hot, with a rich dashi flavor that was comforting until the very end.
