Our specialty is Edo-style sushi, carefully finished one piece at a time using time-consuming preparations such as kombu-jime (kelp curing) and aging. We also offer a variety of inventive a la carte dishes, such as salt-grilled Awaodori chicken, eel, cucumber rolls, and small rice bowls topped with layers of roast beef, sea urchin, salmon roe, and caviar. Together with a rich lineup of drinks including more than ten kinds of sake, you can fully enjoy Tokushima’s abundant local ingredients.

A refined, impeccably clean space featuring a distinctive triangular counter and private rooms with sunken kotatsu-style seating. Arita porcelain tableware enhances the dishes, and the counter seats—where you can observe the artisans' handiwork up close while dining—create a special experience. This is Tokushima's foremost, elegant Japanese-style venue, suited to a wide range of occasions from business entertaining and formal dinners to family celebrations.

The owner, who trained for about ten years in Tokyo Ginza, opened the restaurant with the desire to bring authentic Edomae (Edo-style) sushi to his hometown Tokushima. His unique style, which elevates Awa’s local fish, local sake, and local vegetables using Edomae techniques, has earned a reputation among Tokushima’s gourmets, and the restaurant has become established as a celebrated Tokushima landmark frequented not only by locals but also by tourists and food lovers.
