The meat served at our restaurant is primarily cut from A5 grade Black Wagyu beef. By skipping the usual intermediaries in the supply chain 【Producer ⇒ Auction ⇒ Butcher ⇒ Wholesale ⇒ Meat Shop ⇒ Grilled Meat Restaurant】 and purchasing the whole animal, we are able to offer rare cuts at a reasonable price, as well as high-quality fresh meat and offal. The answer to affordable and delicious grilled meat is "Whole Purchase of Black Wagyu Beef".
Purchasing only popular cuts like sirloin and tenderloin can be more expensive. Buying the whole thing makes everything more affordable.
The costs incurred by wholesalers and meat shops are not just financial but also time-related. For parts where freshness affects flavor, time becomes an important point. The hormones and other items served at our restaurant are delicious precisely because they are fresh.
Popular rare cuts like Ichibo, Misuji, and Frank become expensive when purchased as specified. Especially today, when black-haired Wagyu is in short supply, it has become difficult to obtain without buying the whole cattle.
Since its founding 20 years ago, the Yakiniku Master has continued to support Mitsuru. Their ability to instantly assess the freshness of the meat of the day and the tenderness that varies by cut is unparalleled.
Entering the world of grilled meat for 20 years. Uses multiple types of knives to butcher beef. The points for inserting the knife require skilled technique and keen eyesight.
Fresh meat quickly seared to ultra-rare, cut into a suitable size, and mixed with a special Yukke sauce. When combined with the egg yolk, it brings back a nostalgic flavor.
