This is a small shop with only a counter that has the atmosphere of a soba restaurant. The combination of the pitch-black soup and the impressively thick, curly noodles was irresistibly delicious. First, I enjoyed the noodles as they were, and then when I lightly added some salt, the aroma of the wheat spread out beautifully. Dipping the noodles into the broth mixed with a raw egg increased the richness, making me smile involuntarily. Despite the richness created by the back fat forming a film, the aftertaste was surprisingly light, and I ended up drinking it all. I was able to enjoy the finishing touch of soba-yu (noodle water) carefully, and the feeling of happiness lingered after the meal.
