At a long-established soba restaurant, you can enjoy thick, rustic soba that releases its aroma with every bite. The soba, generously piled on a wooden board, is visually striking and exciting. I was surprised by how clearly the flavor of the soba stood out even when eaten without dipping it in sauce. The dipping sauce, which has a bonito flavor and is slightly sweet, pairs perfectly with the soba and the soba broth, keeping it interesting until the end. The unique texture that invites you to chew thoroughly in your mouth makes it hard to put down the chopsticks. The shop's appearance is simple, but I felt that this gap adds to its unique charm.
