A New Frontier of Sushi Connecting Okinawa and Hokkaido
This restaurant offers a unique blend of fresh fish from Okinawa and Hokkaido. Utilizing aging techniques, the rice is cooked in a traditional nanbu iron pot, which is a standout feature. They use two types of vinegar rice, red and white, to maximize the umami of the ingredients. Each visit promises new discoveries in the world of sushi.
