The general and his apprentices are quite unique as rumored. I enjoyed it as an entertainment, though people who are not good at it may not like it. The white vinegared kohada out of 4 kinds (red vinegared, white vinegared, kibi-vinegared, and kombu vinegared), and the raw conger eel. raw conger eel was delicious. What was interesting was Gangase (poisonous sea urchin) Boiled Clam The boiled clam was so sweet that I thought they were using honey, and it had a strange texture. They said they boil clams in clam broth, but I couldn't understand the details lol. Not a critique or anything, but purely interesting. They have two types of shari, red vinegar and white vinegar, but I seriously doubt there is any other restaurant that does such an elaborate job except for themselves. They seriously believe that there is no other restaurant but themselves that cares about the temperature of the rice and the temperature of the fish. I wish I could go there once every three years for a story, lol.
