Hisui Soba Specialty Shop Kawasemi is a new soba restaurant that offers 100% buckwheat soba primarily made from Shinshu hisui soba. Using locally sourced ingredients from Sakuhomachi, the hand-made, thin soba boasts exceptional firmness and smoothness. The interior is bright and modern, yet stepping inside, you can feel the warmth of local production for local consumption. The shop near the station has a relatively new appearance that catches the eye. Inside, there are counters and tables where you can sit comfortably. The 100% jade buckwheat noodles, made with local ingredients, are thin, aromatic, and delightful to eat. The seasonal vegetable tempura has a strong flavor of the ingredients, is crispy, and satisfying. The tempura of yamame (mountain trout) and shrimp is also free of any unpleasant smell, with a refreshing flavor that pairs well with the noodles. While waiting, warm soba tea and fried soba noodles are served, making it a pleasant place to relax.
