In a calm shop centered around the counter, I feel relaxed with warm buckwheat tea. It seems that they prepare buckwheat from Ono, Fukui Prefecture, using a hand mill, and you can feel the aroma and strong texture with just one bite. The recommended style is to enjoy it as is with coarse salt, which enhances the flavor significantly. The aroma of the broth is very pleasant, and it has a refreshing aftertaste. They also offer buckwheat rice, buckwheat tofu, and buckwheat dumplings, allowing you to enjoy buckwheat in various forms. The collaboration between the owner and the staff, along with their careful manners, is comfortable, and I was able to relax and enjoy while listening to their explanations.
