After repeated evolutions, it has become the current round nabe with a clear, golden soup. There are two secrets to its deliciousness. One is the use of high-quality suppon. The other is the patience to keep removing the lye in front of the super-heated suppon pot for three hours. This eliminates any unpleasant flavors, eliminates the need for the usual strong ginger flavor, and accentuates the unique flavor that cannot be achieved with beef, pork, chicken, or fish. ¥3,200 (tax included ¥3,520) 'Why isn't grilled eel more popular when it's so delicious?' was the first thing we said when we tasted the finished grilled eel. It goes well not only on its own but also with sake. Rice is not included with this dish, but of course, eel is best enjoyed with rice. We also offer eel dishes that pair well with rice, such as the 'Toro Unaju' below.
Price: 2,800 yen (tax included 3,080 yen), Extra eel: 3,500 yen (tax included 3,850 yen). To match with the rice, the eel is intentionally not grilled over straw. Instead, the young chef, a connoisseur of eel, has pursued to make it even softer with excessive affection, making it melt in your mouth just right. It is a fatty eel that is as rich as fatty tuna, embodying the word 'toro' in two ways.

The special ginjo of Kokuryu from Fukui is available as a regular item for 1,050 yen (including tax of 1,155 yen). Seasonal items such as Shizuku, Hiiragi Juzu, Nisemon, and Ishidaya are also available.
980 yen (tax included 1078 yen) Rare sake from Sado Island, Niigata. The quality in 2020 is outstanding. The aroma is gentle, with no overpowering richness, but it pairs wonderfully with sushi and other dishes rather than being enjoyed on its own.
Zi is a sake from Tochigi Prefecture. It is not always available, but when there is a very good one, I will purchase it. Zi series includes Aiyama and Yamadanishiki Fukurotsuri, which are types of sake that bring a big wave of umami when you take a sip.

The number of bottles shipped is also small, making it truly a phantom. To prevent quality degradation, it is stored in frozen conditions (-40 degrees).

This can be enjoyed as is, but it pairs wonderfully with sake. Please note that this dish does not come with rice. However, eel is best enjoyed with rice, right? We also have eel dishes that pair well with rice, such as the 'Toro Unajyu' below.
