Mr. Tanaka told us about the wines and last time we just stopped by for a tasting, but today we went to buy some wine: a Guy Allion chardonnay, which is an old white wine and should not be chilled too much. I plan to make a sauce with lots of vegetables to serve with carpaccio for dinner tonight. The restaurant opened on March 8 this year and sells organic wines. Makikore Wines is a collection of organic wines by Makiko Kanai, a graduate of winemaking school in France and a certified producer. The grapes are grown using natural farming methods with good vineyard work and no pesticides, and only fully ripe grapes with reduced yields and concentrated extract are used. The producers put a lot of effort into making the wines they want, but there seems to be no added value.
