The meticulous method of 'Hakata Kawa-ya' takes an impressive six days to complete. First, the skin is carefully wrapped around skewers, then marinated in a secret sauce. It is grilled to let the fat drip off, rested for a day, and then grilled again to let the fat drip off once more, repeating this process for six days. This results in a crispy exterior and a chewy interior texture.
The skewered dish made with fresh chicken tenderloin (shigi) is grilled to achieve a moist and juicy texture, transforming the typically dry meat into a delightful experience. The flavor of the wasabi soy sauce on top pairs well with the light taste of the tenderloin.

Sharikkin refers to a sherbet-like form of Kimiya shochu that has been frozen. By freezing the shochu, it can be consumed without adding ice. Unlike regular ice, it does not dilute the flavor or the strong alcohol sensation even after it melts, making it extremely popular among drinkers!
