The creative Japanese cuisine is enjoyable and uplifting. The first dish, a sake lees soup, has a comforting flavor, and the aroma of yuzu gently spreads. The sake poured from the barrel has a pleasant cedar scent and can be enjoyed smoothly even when warmed. The black somen noodles are visually interesting and deliciously slippery. A dish of fresh oysters paired with tomato salsa is also a great match, bringing a smile to my face. There is not only sake but also wine, allowing for various enjoyable pairings.
