As I entered the restaurant, the aroma of spices filled the air, and I was excited to be guided to a seat by the window at the back. The soup curry with chunks of bone-in mutton had a refreshing ginger flavor and a solid spiciness that was addictive. The staple chapati was fluffy and slightly sweet, and its lightness, different from Japanese bread, paired well with the curry. The assortment of chicken, pork, and mutton grilled in a tandoor had the best smoky flavor. The rich mango lassi was creamy and gently balanced the aftertaste of the spices. In the ingredient corner next to the register, the chef helped select spices that would complement the dishes, adding to the fun of trying them at home.
