I am happy that I can casually enjoy the local cuisine of Gokayama at the restaurant in the roadside station. The Gokayama tofu, which can be held firmly with chopsticks, was just as rumored, and its chewy texture was refreshing. In particular, the smoked tofu had a richness like cheese, making me want to pair it with some alcohol. The warm soba topped with a whole iwana (a type of trout) had thick noodles and included mountain vegetables, and the flavor expanded with each bite. The soft serve ice cream made from Bobera pumpkin that I ordered as a break had a subtle aroma and a nostalgic taste. Since it can be enjoyed along with facilities that offer experiences related to the history of Gokayama and washi (Japanese paper), stopping by during the trip makes it even more fulfilling.
