This hearty course begins with Ichinozen, which includes appetizers and ozori, and ends with seasonal fruits and petit fours. The live lobsters and abalones are kept in a fish pond until just before cooking, so you can enjoy the exceptional taste and texture of both. For your meal, you can also choose "Miyabi-dai (sea bream)" bubu-zuke (pickled in soy sauce), which is grown in Amakusa City.
